Just got a QNAP NAS and I thought this feature was a basic one. But apparently it isn't offered.
The QNAS OS can backup its files TO S3. But it can't create a backup FROM S3
Is Syncovery the right solution for this? Is there a guide?

yes, Syncovery is the ideal solution for this. You can install it on the NAS and configure it using its browser based GUI.
Just make sure you install the latest version from our web site, because the one in the QNAP store is pretty old.

Once installed, you can access the web GUI via the Syncovery icon among the QNAP Apps, or by visiting port 8999.
It will first greet you with an SSL configuration page, but within a LAN, it's OK to just click the link where it says "adding ?nossl=1 to the URL".
You can click the "Create Profile" button to create your job. Click the Internet button either on the left side or the right side to specify the S3 connection details.
Choose your copying direction and either Standard Copying or Exact Mirror mode.
You can also specify a schedule when the job should run.
Back on the main web GUI page, you can run a job either "Unattended" or "With Preview".
There's also a little Help link at the right end of the buttons bar.
